POKOTABI / Suehiro
末廣
Suehiro in Fujimidai, Nerima Ward, offers wholesome Japanese cooking built on careful preparation, from simmering offal stew and salt-grilled sea bass to clay-pot rice for ochazuke cooked to order.
01 / ABOUT THE PLACE
In the motsu nikomi stew, neatly sliced daikon, carrot, burdock, and tofu rest together beneath a fragrant sprinkle of freshly chopped scallions. The tender, odorless beef offal offers a pleasing chew, while the refined dashi broth encourages sipping until the bowl is empty, speaking to the kitchen's meticulous prep.
The daily salt-grilled sea bass (suzuki no shioyaki) arrives expertly cooked over the heat, sealing in juices to highlight the clean flavor of its delicate white flesh. Other small starters, such as tender wakasagi (smelt) simmered gently with aromatic sansho pepper, reflect honest, unpretentious culinary technique right from the first plate.
For a satisfying close to the meal, the clay-pot ochazuke is cooked to order, taking about 15 to 20 minutes in an earthenware pot. The steamed white rice retains a distinct, tender bite at its core, served with toppings such as mentaiko, salted salmon, or nori for a thoroughly comforting finish.
Guests can settle into the L-shaped counter or the raised tatami seating with a bottled beer, highball, shochu, or sake in hand. The kitchen also arranges seasonal omakase course meals, making an advance reservation a comfortable way to plan a more leisurely evening out.
